If I eat healthy foods after going to the gym (carrots, apples, other fruits and veggies), is it going to make me gain weight? Or should I just go to sleep quickly before I get even hungrier?

try to avoid simple carbs [fruit]. stick with veggies [without additions like ranch, peanut butter, etc]. low fat cottage cheese is fine too. i usually keep low to 0 carb past 10pm [or 2 hours before i sleep].
